It's getting colder and colder here, we had a beautiful in the 70's weekend and now we're back to like 62 so it's a little chilly. I really need to go to the grocery store and my aunt's house but my ribs feel funny. Every time I twist or bend it's kind of like an air pocket, I hope I just slept weird or something, I hate being sick! Anyway, since I have a few things to do this is pretty easy just prepare and make it in the crock-pot. You can make it in a big pot if you want and it's alot faster but sometimes I just like to be able to prepare and walk away. If you haven't had it you have to try! If you like Chili and Stuffed Peppers it's like a combination, sort of.
Stuffed Pepper Soup
2 lbs ground beef
2 quarts of water (I use about 1.5)
28 oz. can diced tomatoes (don't drain)
28 oz. can tomato sauce
2 cups cooked long-grain rice (1 cup uncooked)
2 large green peppers---chopped
2 beef bullion cubes
2 tbsp brown sugar
2 tsp salt
2 tsp pepper
Brown your beef and cook your rice (I just microwave the rice)
Chop the green peppers
Ok so the truth is...I don't like ground beef, I don't like hamburgers, though I will eat them sometimes, I hate ground beef so for this I have been known (like today) to use half the hamburg and double the peppers. I used 1 pound of hamburger and 4 green peppers but don't tell DB! No one has ever noticed and this recipe makes 16 servings, I don't think it's ever been skimpy on beef.
Add all your ingredients into your crock-pot or your large pot
If you're going to make it stove top get the ingredients to a boil then reduce the heat, cover and cook for 30-40 minutes.
In a crock-pot I turn the heat on high for an hour or two and then low for the rest of the day. Your beef and rice are already cooked so you can really eat this as soon as you want(if you like crunchy green peppers) but to each his own. We usually start digging into after about 4 hours, but it's also alright to make it first thing in the morning and just leave it sit all day on low. If you make it let me know if you love it!
